Coffee Cake Banana Bread

This combo was genius. Two of our favourite desserts, coffee cake + banana bread, combined into one delicious treat. We added Greek yogurt into this recipe to keep the banana bread extra moist. Add on the crumb topping and pure magic happens! This is an easy recipe that will be a sure crowd pleaser.

Ingredients
Banana Bread
  • 4 large bananas
  • ¼ Cup olive oil
  • ¼ Cup greek yogurt
  • 1 egg
  • 1 tsp vanilla
  • 1½ Cups whole wheat flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • dash of cinnamon
  • pinch of salt
Streusel Topping
  • ½ Cup all purpose flour
  • ½ Cup brown sugar
  • 2 tsps cinnamon
  • 3 tbsps butter, cold
  1. Preheat oven to 350F
  2. Mash bananas in a large bowl
  3. Whisk in: egg, olive oil, greek yogurt and vanilla
  4. Gently stir in whole wheat flour, cinnamon, baking soda, baking powder, and a pinch of salt
  5. Pour batter into loaf pan.
  6. In a small bowl, combine cinnamon, flour, and brown sugar.
  7. Cut in butter with a pastry cutter/knife, and mix until the topping looks like coarse crumbs.
  8. Sprinkle coating evenly over the batter.
  9. Bake for 40-45 minutes.
  10. Let cool and enjoy!
