  • 400 g salmon
  • 250 g cherry tomatoes
  • olive oil
Pesto
  • 30 g basil leaves
  • 50 g Parmesan cheese
  • 1 clove of garlic
  • 50 g pine nuts
  • olive oil
Italian Salmon on the BBQ in foil

Salmon wrapped in foil and cooked on the barbecue is a delicious dish that cannot go wrong.  You can prepare this Italian salmon on the BBQ in foil hours in advance, so that the homemade pesto can also be drawn into the salmon. Of course you have to keep the salmon cool. Preparing salmon in this way is super simple and this preparation keeps the salmon nice and tender and it certainly won't dry out.

Prep

  1. Make the pesto: Place the basil leaves, Parmesan cheese, garlic and half of the pine nuts in a food processor and add the olive oil. Mix until it has a nice thickness (not too thin).
  2. Take four pieces of aluminum foil for the salmon and brush with olive oil.
  3. Place the salmon in the aluminum foil and coat the top with the homemade pesto.
  4. Cut the tomatoes in half and place them next to it.
  5. Grill the pine nuts until they get some color and place them on the salmon.
  6. Wrap the packages loosely.


Cooking

  1. Light the barbecue and get to a medium heat.
  2. Place the salmon in foil on the BBQ and grill them in about 8 minutes to a core temperature of 50℃.
