Wild garlic wedges

  1. Preheat the oven to 180 fan.
  2. Scrub the potatoes but don’t peel them. Slice in half lengthways and then cut each half into 4 or 5 long wedges.
  3. Toss the wedges in wild garlic oil (or the wild garlic purée leftover from making wild garlic oil, along with some further rapeseed oil) and season with sea salt flakes.
  4. Bake in the oven for 35 minutes, turning halfway.
  5. Serve with wild garlic mayonnaise.
