Whole Ras El Hanout Roasted Cauliflower

This year I’m not doing #Veganuary, but that doesn’t mean I don’t love a good meat-free meal. While this recipe may take a while, it's a low-fuss meal that is full of flavour.

Total 1 hour 30 minutes

1. Put the whole cauliflower in a very large pan and half with water. Pop the lid on and cook on the hob for 15-20 minutes to part boil/steam the cauliflower.

2. Meanwhile, mix the lemon juice, zest, spices & olive oil together in a bowl

3. Take the cauli out the pan and place on a lined baking tray. Using a pastry brush, brush the spice/oil mix all over the cauli - bake at 180 degrees for 45-60mins

4. Check on the cauli about half way through and give it another dousing of the spice mix to make sure the flavour really seeps through
