The Best Ever Roast Potatoes

If you want my secret for the perfect Roaster which has a crisp and golden outer and a fluffy centre then look no further, My secret is to crush the potatoes half way through the cooking process. Once you try these you will never ever go back.

  1. Pre heat your oven to 180℃ / gas mark 4. Pour the oil into a roasting tin then pop this into the oven to heat up.
  2. Par boil the potatoes in boiling salted water for 8-10 minutes then drain, leave to steam in the colander for 5 minutes. Place the potatoes into the tray, coating with the oil and then season with salt and pepper. Cook for 30 minutes. Remove from the oven and turn the potatoes, use the bottom of a glass to crush them down then scatter over the rosemary and garlic cloves, return to the oven for 15-20 minutes until golden and crisp.
