  • 4 crumpets

  • low calorie cooking oil spray

Baked Egg-filled Crumpets with Asparagus Dippers

Prep 5 minutes
Total 12 minutes
  • Preheat your oven to 180℃ 
  • Take a knife and carefully cut a circle, leaving roughly a 2cm wall inside the crumpet
  • Using a spoon, hollow out the inside of the crumpet, making sure to keep the base of the crumpet intact! Pop them on a baking tray
  • Crack 1 egg into each hollowed out crumpet with a sprinkle of salt and pepper on top then place the tray into the oven for 6 minutes
  • Whilst they’re in the oven, slice the ends off of your asparagus and add to a pan with a few sprays of low calorie cooking oil spray
  • Fry the asparagus for 5 mins, turning over half way
  • Remove the crumpets from the oven and serve with the asparagus dippers!
