Ingredients
  • 1 tbsp olive oil
  • 1 onion, diced
  • 1 carrot, grated and chopped
  • 2 large cloves of garlic, grated or crushed
  • sea salt
  • cracked black pepper
  • 1 tbsp paprika
  • ½ tsp smoked paprika
  • 1 tbsp dried oregano
  • 2 tbsps red pesto
  • 1 tbsp tomato puree
  • 60 ml red wine vinegar
  • 400 ml tin chopped tomatoes
  • 1 tbsp Worcester sauce
  • 10 g basil leaves, roughly chopped
  • 1 tbsp soft brown sugar
  • 200 g spaghetti, cooked

CHICKEN & TURKEY RAGU

This Ragu uses lean mince meat, it is light and tasty, and super quick to cook. This is great for cooking in batches and storing in the freezer.

Prep 10 minutes
Total 30 minutes
  • Heat the oil and sauté the onions and carrots until soft but not brown.
  • Add the garlic and stir.
  • Season well.
  • Add the paprika’s and the oregano, the red pesto and the puree, mix well.
  • Add the red wine vinegar cook for a minute then add the chopped tomatoes. Fill half the can with water and add to the pan.
  • Add the Worcester sauce and the brown sugar, reduce the heat and let this simmer for 15-20 minutes.
  • Mix through the cooked spaghetti and serve with an extra sprinkle of basil and a drizzle of extra virgin olive oil.
