  • burrata
  • 5 mixed tomatoes, roughly the same size
  • 2 beetroot (already cooked and/or pickled)
  • 1 large red onion
  • bunch of fresh basil
  • olive oil
  • splash of lemon juice
  • micro herbs and a few basil leaves, to serve

A summer salad if evert here was one!
Beetroot and Tomato Salad with Burrata and Basil Oil Beetroot and Tomato Salad with Burrata and Basil Oil

This salad combines the beautiful Mediterranean flavours of ripe juicy tomatoes, lemons, olive oil and basil with the gorgeous creamy Buratta. It’s not difficult to see how this cheese has become so popular, but it’s a ‘one sitting’ cheese... once you cut into it and release the oozy cream inside, it has be eaten!

  1. Start with your Buratta... drained and placed, whole, in the middle of a serving plate or platter
  2. Then slice the tomatoes, beetroot and red onion horizontally. Arrange the tomatoes and beetroot around the Burrata in a circular pattern until you’ve completed two full (slightly overlapping) circles. Arrange the onion rings randomly on top
  3. Finally put a bunch of basil leaves in a food processor and blitz with some sea salt and a good glug of extra virgin olive oil. Pour some over the salad, along with a splash of lemon juice. Season and finish off with some lovely micro herbs and a few basil leaves and serve the remainder of the oil on the side
