

Chilli Prawn Linguine
This dish will make you feel like you're on the Amalfi coast

- Grab a large saucepan and fill with boiling water and place over medium/high heat, add some salt and olive oil to the boil and bring to a boil. Cook linguine to packet instructions.
- In a non stick frying over medium/high heat, add 1 tbsp of olive oil, add the prawns and cooked for 1 min on each side then remove and set aside.
- In the same frying pan add the chilli & garlic and begin to fry for 2-3mins trying not to burn the garlic, keep the mixture moving in the pan. Add the tomatoes and cook for a further 1min.
- Once linguine is cooked, with tongs take from the saucepan and place it straight into the frying and mix together.
- Re-add the prawns and coat to combine, mixing everything well.
- Take off the heat and season to taste, add the chopped parsley then serve. Enjoy

60 Cherry Tomatoes (Cut In Half)
