Ingredients
  • ½ lb Fresh Shrimp
  • ½ lb Fresh Scallops
  • 2 diced Roma Tomatoes
  • 1 peeled and diced Cucumber
  • 2 Fresh Jalapeños
  • ½ Cup diced Red Onion
  • Juice of 6 limes
  • 1 bunch Fresh Cilantro (plus more if desired)
  • 1 tbsp olive oil
  • 2 Fresh Garlic Cloves
  • ½ Cup Clamato
  • Salt to taste

Scallop and Shrimp Ceviche

Prep 20 minutes
Total 1 hour
  1. Dice your seafood and add to a bowl with the juice of 4 limes. 
  2. Cover and refrigerate for at least 1 hour.
  3. In a blender add both jalapeños, most of the cilantro (save about 1/4 cup), olive oil, pinch of salt and the garlic cloves.
  4. Blend until smooth.
  5. To your now “cooked” seafood, add your diced tomato, cucumbers, red onion and the remaining cilantro. Add salt to taste.
  6. Pour in your green sauce and mix until well incorporated. 
  7. Add Clamato and stir. 
  8. Serve with lime on a tostada or with chips. Eat Up!
