1 tsp Butter

1 Garlic Clove (Grated)

100 g Cheddar Cheese (Grated)

1 tbsp Dijon Mustard

200 g Mushrooms (Sliced)

300 ml Double Cream

100 ml Vegetable Stock

Fresh Flat Leaf Parsley (Garnish) - Optional


Roasted Cauliflower In A Creamy Cheddar Sauce
One of the tastiest cauliflower cheese's you'll scoff on

- Preheat oven to 200℃. In a large saucepan with a lid, fill up with 1/4 boiling water and bring to a boil. Place the cauliflower in and steam for 15mins.
- While that's steaming grab a large non stick frying pan and place over medium heat. Add the olive oil, butter, onions and mushrooms and begin to cook for 8-12mins until onions and mushrooms are golden, then add the stock, garlic and cream and stir together.
- Once the sauce comes together add the mustard and cheddar cheese and stir through.
- After 15mins, take the cauliflower out and place it in the middle of the pan of cheese sauce, spoon some sauce over the top of the cauliflower and then place in the oven to roast for 20mins.
- After 20mins take the cauliflower out and check the consistency of the cheese sauce, if your want it looser add a little bit more stock and stir through, also check sauce for seasoning and if your happy then plate up. Enjoy
