  1. Spray a frying pan with calorie controlled cooking spray on a low heat and add your mushrooms, cooking till they soften and start to darken in colour.
  2. Turn the heat up under your pan then add the stock, letting it bubble/steam for a few minutes and reduce the stock down by half.
  3. Then add the cream cheese and stir through till thickened.
  4. Toast 2 slices of bread, add the mushrooms and sprinkle on the chives.
