Greek Chicken Gyros with Mint Tzatziki
Greek style chicken gyros marinated in a tangy fresh yoghurt & oregano sauce, grilled to perfection and served with a mint tztatziki dip. Perfect in wraps, flatbreads or with a delicious chickpea salad.
Try and get as much moisture out of the cucumber as possible with paper towels, or a clean tea towel.
Any leftover chicken is delicious cold the next day with any leftover tzatziki, with rice, pasta or as a snack.
Large mixing bowl, smaller bowl or ramekin, spoons, BBQ or grill pan, box grater, kitchen roll
- In a large tub, mix the chopped chicken with the marinade ingredients, stir thoroughly, season well and then cover and chill for 3+ hours or overnight
- Whilst marinating, grate the de-seeded cucumber, squeeze out all excess water with paper towels and mix with the yoghurt, oil and chopped mint. Leave to chill in the fridge for at least 30mins
- When ready, heat the BBQ or griddle pan, fry the chicken for 3-5mins each side until cooked through. Rest for 5 mins before serving
- Serve in flatbreads or wraps with the tzatziki, and perhaps some grilled courgette or red pepper
