The Pasta
  • 250 g Tortellini
  • Sea Salt
The Sauce
  • 2 tbsps Olive Oil
  • 2 Garlic Cloves (Minced)
  • 250 g Cherry Tomatoes
  • 25 ml White Wine
  • 15 g Parmesan
  • Fresh Basil (Torn)
  • 100 ml Double Cream
  • Sea Salt & Black Pepper
The Garnish
  • Parmesan
  • Fresh Basil (Torn)

Creamy Tortellini


  1. Heat olive oil over medium heat, add garlic cook for 1 minute until softened but not browned (at this point have your pasta water on high heat as well)
  2. Add cherry tomatoes and continue to cook on medium heat for 1-2 minutes
  3. Add white wine and reduce, then add cream
  4. At this point the tomatoes should have softened, take a fork and mash them
  5. Bring to a simmer and season with salt and pepper to taste
  6. Place tortellini into boiling salted water
  7. Add parmesan and fresh torn basil (6-8 leaves)
  8. Drain pasta and add to sauce, allow to cook in sauce for 1 minute
  9. Garnish with fresh torn basil and parmesan
  10. Enjoy!
