Fish Tacos

  1. Preheat oven to 180℃ (fan assisted).
  2. In a small bowl, combine the cumin, oregano, cayenne pepper, salt, pepper and place to one side.
  3. Cut the fish fillets into 4 -5 portions per fillet (depending on size), rub a little oil over the fillets and season with the spice mix. Place on a baking tray lined with parchment paper and bake for 25 minutes.
  4. As the fish cooks, use this time to prepare the remaining vegetables for the taco toppings. Place them all in a bowl and refrigerate until ready to serve.
  5. To make the Lime Crema, combine the mayonnaise, soured cream, lime juice in a jug and stir thoroughly. Refrigerate until ready to serve.
  6. When the fish has cooked, remove from oven and place in the centre of each softshell tortilla.
  7. Garnish with the chopped vegetables and crumble the feta cheese on top and finish with a drizzle of lime crema.
