Ingredients
  • 2 chicken breasts
  • 2 small red peppers
  • 2 white onions
  • 4 pineapple slices
  • 140 g self raising flour
  • 200 ml cold water
  • ¼ tsp white pepper
  • ½ tsp salt
  • Oil for frying

  • 4 brioche buns
  • 4 tbsps mayonnaise

Sweet and Sour Chicken Ball Burger


  1. Mix the flour, pepper & salt with the water and set aside for 10 minutes
  2. Make the sweet and sour sauce as per the gnocchi recipe (make 3x as much as the recipe calls for)
  3. Slice the onion into about 0.75 cm rounds - 2 per burger, slice the pepper into about 5 cm x 5 cm squares and then add to a dry pan to char along with the pineapple slices.
  4. Butterfly the chicke breasts so there are 4 thinner pieces then carefully dip each piece in the batter and fry until golden on both sides and cooked through (about 7 minutes each side). You can finish this off in the oven if needed.
  5. Make the burger with lettuce, mayo, charred veg and pineapple, chicken and S &S sauce.
