  1. Add granola to a food processor and pulse until crumbs remain. Set aside.
  2. Add lemon curd and dates to a food processor and blend until smooth.
  3. Add granola crumbs and shredded coconut. Pulse until just combined (you don't want a paste).
  4. Create 12 equal sized balls and coat with shredded coconut. Chill in the refrigerator for at least 30 minutes.
