  • tagliatelle (enough for two)
  • a handful of cherry tomatoes
  • 1 clove of garlic, finely chopped
  • 1 tbsp tomato puree
  • splash of white wine
  • ½ ball of mozarella, roughly torn
  • handful of pine nuts
  • a little chopped parsley, as garnish

A stunningly simple pasta dish for a quick but satisfying lunch!
Tagliatelle with Cherry Tomatoes, Mozzarella and Toasted Pine Nuts! Tagliatelle with Cherry Tomatoes, Mozzarella and Toasted Pine Nuts!

A handy little dish to use up the last of the cherry tomatoes from the greehouse and some leftover mozarella from the fridge! So easy, so tasty and the toasted pine nuts even give it a touch of sophistication!

  1. Start with the pasta and follow the instructions on the pack for quantities and cooking times
  2. Whilst the pasta cooks, heat up a little oil in a shallow pan and add in the garlic and tomatoes. Stir fry over a hottish heat until the tomatoes start to spit and catch a little. Then add in the tomato puree and white wine
  3. Finally, drain the pasta, retaining just a little of the cooking juices and add in with the tomatoes. Keep on a low heat and stir in the mozarella. Let it warm through a melt a little whilst you pan fry the pine nuts in a little oil to toast to a golden brown colour. Sprinkle these on top and finish with the chopped parsley
