Ingredients
  • 1½ Cups of flour
  • 1 tsp Baking powder
  • ½ tsp Baking soda
  • ¼ tsp Cinnamon powder
  • ¼ tsp Salt
  • 2 Large eggs
  • ½ Cup of softened butter
  • ¾ Cup of sugar
  • 1 tsp Vanilla extract
  • Cups of Greek yoghurt
  • 2 Peaches (sliced into thin crescents)
  • Butter for lining the cake tin
  • Brown sugar for sprinkling on the batter

Peach Cake

  • Cream the butter with the sugar till it is soft and creamy. Then beat in the eggs one at a time and then add the vanilla extract and the yoghurt. Continue beating it gently till it is smooth
  • Whisk the dry ingredients - flour, baking powder, baking soda, cinnamon powder and salt.
  • Add the dry ingredients to the wet ingredients a little at a time and stir till it is mixed well and completely smooth.
  • Line a 9 inch round cake pan with a parchment paper cut into shape and then butter the sides. Pour the batter into the pan and use a spatula to smooth the surface.
  • Arrange the peach slices on the top in a concentric circle and sprinkle some brown sugar on top to enable the caramelization of the peach slices.
  • Preheat the oven at 350F and then bake the cake for 45-50 minutes or till a skewer inserted into the center comes out clean.
  • Let the cake cool on a rack and serve with a side of cream or custard and garnished with a sprinkle of icing sugar.
