Ingredients
Masala marinade
  • ¼ tsp Coriander powder
  • 1 tsp Turmeric
  • 1 tsp Garlicc powder
  • 1 tsp Ginger powder
  • 1 tsp Paprika
  • 1 Juice of a lemon
  • 3 tbsps Oil (I used olive oil)
  • Pinch of garam masala
  • Salt to taste
  • Pepper to taste
Chicken
  • 1 Whole chicken (skin on)
  • 1 Lemon sliced into discs
Potatoes
  • 4 Medium sized potatoes (peeled and quartered)
  • 1 tbsp Oil

One tray wonder with beautiful potatoes

This recipe can feed 4 for one meal but I made it for hubs and I as we wanted leftovers to use throughout the week for quick meals after work.

The potatoes work really well in the tray as they soak up the chicken's juices and you end up with slightly crunch but fondant like potato. Hubs and I couldn't get enough of them!

Total 1 hour 45 minutes
  • Pre heat oven to 200℃
  • Cut the chicken so you can flatten it into a butterfly. I opted to cut along the breast bone with kitchen scissors.
  • Add all your masala ingredients into a bowl and mix them well to form a mix that you can brush onto the chicken.
  • Line a tray with parchment / greaseproof paper and add the chicken (skin side down). Brush the underside of the chicken with the masala, once covered flip the chicken over.
  • Brush the top of the chicken (skin side up) with the remaining mix, cover every bit of the skin!
  • Lift your chicken slightly and place the lemon discs under it, I had 4-5 and evenly spaced them out.
  • Toss the potatoes in oil, ensuring you cover them fully. Place around the chicken in the tray. Cover the tray with foil.
  • Place the tray in the oven and cook for 10minutes at 200℃. Once your 10 minutes are up, turn the temperature down to 180℃ and cook for 45 minutes.
  • Check the chicken, flip the potatoes over so they're coated in the juices and put in the oven for another 30 minutes. Check the chicken, it should be cooked by now.
  • Toss the potatoes round again and put the chicken into the oven for 5 minutes uncovered to brown the chicken.
  • Chicken is ready to serve!
