  • 500 g Pork mince
  • 1 Large white onion
  • 2 Red chillies
  • 1 Carrot
  • 2 Spring onions
  • Handful chopped coriander
  • 3 tbsps Light soy sauce
  • 1 tbsp Gochujang or chilli paste
  • 1 tbsp Oyster sauce
  • 1 tbsp Sesame oil
  • 1 tbsp Rice wine
  • Lettuce leaves for serving
  • 4 Duck eggs
  • 1 Inch piece ginger grated
  • 2 tsps Garlic paste
Spicy chilli oil
  • 2 tbsps Sesame oil
  • 2 tbsps Rape seed oil
  • 3 tsps Chilli flakes
  • 2 Sliced garlic cloves
  • 2 tbsps Light soy sauce
  • 1 Spring onion

A really quick and easy dish that delivers maximum flavour and minimal calories!

Prep 30 minutes
Total 30 minutes

Start with the spicy oil. Heat the sesame and rape seed oil in a pan. Put the chilli flakes and garlic in a heat proof dish. Once the oil is super hot, pour over the chilli and garlic and let sizzle away. Once cooled, add in the soy sauce and then thinly slice some spring onion and add to the mix. Set aside.


Slice the onion and grate the carrot. Throw into a hot pan. Cook until the onion is softened.slice the chilli and add this in along with the garlic and ginger. Stir then add thr mince. Cook until browned then throw in the rest of the ingredients. Stir round for 5 minutes and then load into your lettuce leaves.


Top these with a runny duck egg and drizzle over some of the oil to finish.
