  • half a block of ready made puff pastry
  • half a jar of Mojo Verde pesto (from Epicure)
  • 10 5mm slices of goat's cheese
  • 1 red onion, sliced into rings
  • 2 large tomatoes, sliced
  • a handful of wild garlic leaves
Goat's Cheese and Wild Garlic Tart
An easy but utterly delicious tart that combines the rich earthy taste of goat's cheese with the fresh aromatic flavour of wild garlic!

Ready made puff pastry makes this sort of tart so quick and easy and it looks fabulous! Unfortunately the season for wild garlic doesn't last long, so you need to forage for them while you can, but they're so worth it. They smell wonderful and add a beautiful delicate sweet flavour to dishes like this. The perfect accompaniment to goat's cheese too!

  1. Start with the puff pastry, rolled out on a floured surface to approximately 30cm by 20cm. Carefully transfer to a well greased baking tray (or line with greaseproof paper). Score a 1.5cm border around the edges and prick inside the border with a sharp knife
  2. Then spread the pesto all over the base (except the border). Top with the slices of goat's cheese and tomatoes and season with coarse sea salt and black pepper
  3. Finally melt a knob of butter in a pan and gently saute the wild garlic for just a minute or two, before adding to the tart along with onion rings. Drizzle with olive oil and bake in a hottish oven, until the tart has browned nicely and the pastry around the edges has risen
