INGREDIENTS

For the chicken
  • 6 Chicken legs
  • 1 tsp Dried oregano
  • 1 tsp Dried thyme
  • Drizzle of olive oil
  • ½ tsp Salt
  • 1 tsp Cracked black pepper
For the rest
  • 500 g Fresh gnocchi
  • 2 Medium onions - sliced
  • 1 Lemon - sliced
  • 3 Cloves of garlic - crushed
  • 1 tbsp Butter - YUP
  • Splash of water (or stock if you want)
For the courgettes
  • 2 Courgettes - sliced thickly
  • ½ Chilli flakes
  • 1 tsp Smoked paprika
  • Drizzle of olive oil

Chicken & Gnocchi Bake

With grilled spicy courgettes

This recipe is what I call a 'throw together' dish

1) Preheat your oven to 200 C

2) Marinate your chicken and set aside for about 15 mins

3) Whilst that's cracking on, slice up your onions, garlic and lemon and get a pan of boiling water on the hob

4) In to a baking dish add the onions, garlic, lemon, water and the chicken - pop in the oven for 15 mins

5) Meanwhile, carefully throw the gnocchi in the boiling water and cook for 1 mins - NO MORE

6) Remove from the pan and drain well

7) Add to the pan of chicken, onions etc and pop back in the oven for a further 7-10 mins

8) Whilst that's cooking away, you can start on the courgettes - wack on the marinade and get a griddle pan on the hob to a high heat

9) Grill on each side for no more than 1 min and then remove - set aside

10) Remove the chicken dish from the oven and finish off with the butter which will create this beautiful silky sauce!


Serve together and enjoy!
