In a pot over medium heat, cook rice per package instructions.
Over high heat in a large dry pan, add pine nuts and almond flakes and roast until golden. Shouldn’t take for more than 2 minutes as the almond flakes burn quickly. Set aside
Using the same pan reduce the heat, add the olive oil, then the onion and cook onions until the have browned. Set aside a bit of the onions for serving.
Then add garlic to the pan and cook for a minute.
Add turmeric, cumin, coriander, cayenne pepper and cook until the spices are fragrant.
Now, add the rice and stir until incorporated with the spices and it has gained the yellow colour from the turmeric.
Season with salt and pepper. Allow to simmer covered for 5 minutes.
Then stir in the raisins into the rice and you are done…
Serve rice in a bowl and top with the roasted almonds, pine nuts, onions and sprinkle the fresh coriander on top..
