Mediterranean Inspired Rice

Easy Yellow Rice

This recipe is pretty good by the way. As a South Africa we do eat a lot of yellow rice with raisins and paring it with the onions, nuts and spices takes it to a whole new level. I hope you enjoy it.

Ingredients
  • 1 Cup of white rice, rinsed
  • 2 tbsps pine nuts
  • 1 tbsp almond flakes
  • Salt and Pepper
  • 1 red onion, peeled and sliced
  • 1 clove of garlic, minced
  • Salt and Pepper to taste
  • 2 tbsps Olive oil
  • 2 tbsps raisins
  • ¼ tsp turmeric
  • ¼ tsp cumin
  • ¼ coriander
  • ¼ tsp cayenne pepper
  • A few roughly chopped fresh coriander leaves for serving

In a pot over medium heat, cook rice per package instructions.


Over high heat in a large dry pan, add pine nuts and almond flakes and roast until golden. Shouldn’t take for more than 2 minutes as the almond flakes burn quickly. Set aside


Using the same pan reduce the heat, add the olive oil, then the onion and cook onions until the have browned. Set aside a bit of the onions for serving.


Then add garlic to the pan and cook for a minute.


Add turmeric, cumin, coriander, cayenne pepper and cook until the spices are fragrant.  


Now, add the rice and stir until incorporated with the spices and it has gained the yellow colour from the turmeric. 


Season with salt and pepper. Allow to simmer covered for 5 minutes.


Then stir in the raisins into the rice and you are done…


To serve,


Serve rice in a bowl and top with the roasted almonds, pine nuts, onions and sprinkle the fresh coriander on top..


Enjoy with a good curry of your choice.
