Double Garlic Mini Roasties

Wonderful as a side for Steak or a Roast, these mini Potatoes roasted with Wild & Bulb Garlic are delicious!

  • Preheat your oven to 180C
  • Put the Wild Garlic leaves in a bowl & pour boiling kettle water over them to wilt then drain.
  • Add the leaves to a blender with the Oil & blitz until smooth & bright green.
  • Peel the Potatoes, cut them into 1-2cm cubes & pop them in a bowl with the Minced Garlic.
  • Pour 2tbsp of the Wild Garlic oil over the Potatoes and toss well to coat.
  • Pour the Potatoes onto a baking tray & give them a good sprinkle of Salt then bake for around 30 minutes until golden.
  • Serve into a bowl & drizzle with a teaspoon of the oil.
