INGREDIENTS

  • 250 g beef mince
  • 1 red onion very finely diced (save a third to garnish)
  • 2 cloves garlic crushed
  • 1 x 400g tin chopped tomatoes
  • 50 ml tomato ketchup
  • 250 g dried pasta of your choice
  • 1 slice white bread grated into breadcrumbs
  • 70 g cheddar cheese
  • 50 g gherkins finely diced
  • Reserved red onion for garnish

Cheeseburger Pasta Bake

This recipe comes in at 63p per portion based on the amounts of ingredients used so this is perfect for feeding a family on a budget.

  1. Fry the mince in a hot pan for 5-6 minutes until browned then set-aside, in the same pan, fry the onion and garlic over a medium heat for around 4 minutes. Add the reserved mince, chopped tomatoes, tomato sauce and simmer for another 5 minutes until thickened. Season with salt and pepper.
  2. Meanwhile cook the pasta to the packets instructions in a large pan of boiling water along with a pinch of salt, drain then toss through the tomato sauce. Pour into a baking dish and top with the cheese and breadcrumbs. Bake in a pre-heated oven set at 200℃ / gas mark 6 for 20 minutes or until golden. Sprinkle over the red onion and gherkins and enjoy.
