Cauliflower
  • 1 medium cauliflower
  • 50 g Butter
  • 20 g Nduja
Cheese sauce
  • 35 g Butter
  • 35 g Plain flour
  • 500 ml Milk
  • 90 g Gruyere (grated)
  • ½ tsp Mustard powder
Toppings (optional)
  • 10 g Melted Butter
  • 5 g Nduja
  • Crispy breadcrumbs

Whole roasted nduja cauliflower

with cheese sauce and crispy breadcrumbs

Total 1 hour
  1. Preheat the oven to 180℃ fan and place a tray of water on the bottom shelf.
  2. Melt 50 g butter and combine with 20 gnduja in a bowl.
  3. Prepare the cauliflower by removing the leaves, trimming the base and cut a cross in the stalk. Brush all over with the nduja butter and place on a baking tray. Roast for 55 minutes - 1 hour.
  4. After 40 minutes, cook the butter and flour together in a saucepan to form a roux. Add the milk bit by bit, stirring constantly so that it’s smooth. Add the grated gruyere and mustard powder.
  5. Put the cheese sauce on a dish and top with the roasted whole cauliflower. Drizzle over nduja butter and crispy breadcrumbs and serve.
