200 g Milk chocolate

100 g White chocolate

175 g Butter

250 g Light or Dark Soft Brown Sugar

4 Medium eggs beaten

120 g Plain flour

150 g Crushed biscuits

Additional biscuits for the topping


Chocolate Brownies

- Put the oven on at 180 and line a baking tray with greaseproof paper, mine was a 9” tray.
- Melt your milk and white chocolate (you could use dark chocolate) in a glass bowl over a pan of boiling water.
- Once melted add your baking spread I tend to use Stork for baking something like this.
- Add the sugar and wait for the butter and sugar both to melt stirring frequently till fully combined.
- Then take off the pan and add the beaten eggs and vanilla extract and mix in really well.
- Next add the flour and crushed biscuits and mix thoroughly.
- Pour the mixture in to your baking tray.
- I used 8 of the biscuits I used which I split in two before dividing the 16 pieces evenly over the top of the mix.
- Pop in the oven for 30-40 minutes till it’s almost set in the middle.
- Let it chill completely in the tray before taking it out and then cutting into 16 pieces and sprinkling with icing sugar 😋
