Ingredients checklist

Pizza Topped Omelette

  1. Whisk up your 3 eggs with a splash of milk in a bowl and heat up your pan.
  2. Once heated, Whip up 3 medium eggs and into the pan to do your omelette and cover with a lid/plate.
  3. In the meantime cook your sausage, bacon & mushrooms (I always grill mine but you could fry in a separate pan).
  4. Once cooked, take your omelette onto a plate and season with salt & pepper.
  5. Roughly chop up the bacon, sausage & mushrooms and then load it into one side of the omelette and fold it over.
  6. Spread tomato puree across the top.
  7. Spread your mozzarella and put the plate under the grill until it's nice and crispy on top then put some dried parsley over.
