  • 1 tsp minced garlic
  • 2 tbsps light soy sauce
  • ½ tbsp rice vinegar, or lemon juice
  • 1 tsp sesame oil
  • Splash of hot water
  • Chopped spring onions

Creamy Peanut Noodles

I have this on repeat and I can't get enough. It's so easy and so delicious, and totally vegan friendly too. Feel free to adapt this to your dietary requirements by adding chicken or tofu to increase the protein content!


  1. Mix the peanut butter with hot water until loose and runny. Add the rest of the ingredients in and combine well to make the sauce.
  2. Boil the noodles according to package instructions. Drain and run under cold water quickly to wash away some of the starch and prevent it sticking together.
  3. In a large bowl, mix the noodles with the sauce thoroughly. Garnish with chopped spring onions, and option to add some chilli oil. Slurp and enjoy!
