Ingredients
Miso vegetable noodles
  • 1 Bundle Soba noodles
  • 1 Handful aparagus tips per person
  • 5 halved radishes
  • 1 handful aubergine chunks
  • 2 Heaped teaspoon White Miso paste
  • 1 tbsp honey
  • 1 tsp LKK Light Soy Sauce
  • 1 tbsp Olive oil
Noodle dressing
  • 1 tbsp LKK Season Black vingar
  • 1 tsp LKK Chiu Chow Chilli Oil
  • 1 tsp LKK Light Soy Sauce
  • 1 tsp Pure Sesame Oil
Spicy Roasted Corn
  • 1 Corn on the cob
  • 1 tbsp Sriracha Sauce
  • 1 tbsp Honey

Miso honey roasted vegetable soba noodles

Gorgeous quick and easy noodle dish perfect for a light lunch

Prep 15 minutes
Total 25 minutes
  1. Preheat the oven to 200c. brush the corn on the cob with a little oil and put in the oven (10mins wish).
  2. Cook the soba noodles as per packet instructions and then leave to cool in cold water.
  3. In a bowl mix the miso, honey, soy sauce and oil. add all the veg and toss throughly and put on to a roasting tray then into the oven (10-15 mins) giving them a shake every now and then.
  4. In a separate bowl mix the sriracha honey together
  5. Pull the corn out and pull the corn out and brush with the sriracha mix, (saving a little for later) and put back into the over for a couple more minutes. once glazed take it out the oven and carefully cut the corn off and brush with more sriracha mix and sprinkle with sea salt
  6. drain the noodles and add all the noodle dressing.
  7. once the veg is nicely roast you are ready to assemble the dish put the noodle at the bottom and place the veg on top and around, sprinkle with some sesame seed and enjoy.
