- Trim the heart of anything that looks like sinew and remove any blood clots. Slice it open, lay it flat and cut into 60 g pieces, each about 1/2 inch (5mm) thick.
- Toss the pieces of heart in the vinegar, salt, pepper and thyme and leave to marinate for 24 hours..
- Heat your grill or griddle pan and sear the heart for 3 minutes on each side.
- Serve with the watercress, shallots and Pickled Walnuts in toasted buns.
