Breakfast Tortilla muffins

The ultimate breakfast! Layers of soft egg, potato & onion packed into these mini tortilla muffins! These are a great breakfast on the go, so quick to prep and reheat too.

  1. Preheat oven to 180 degrees
  2. Heat the olive oil in a pan, medium heat
  3. Slice your onions and potatoes into thin halves
  4. Add onions to heated oil for 8-10 minutes
  5. crack 4 eggs, season with salt and pepper
  6. Once cooked, add your onions to the egg mixture and stir in all together
  7. Add your sliced potatoes to the remaining oil and cook for 8-10 minutes
  8. Once cooked, add the potatoes to the onion and egg mixture
  9. Add chopped parsley and mix all together
  10. Spray muffin tin with Extra virgin olive oil ( I used la Espanola spray for easy application)
  11. Add egg mixture to your muffin holes and bake for 12 minutes
  12. remove, eat and enjoy!
