  • 2 Swordfish Steaks
  • 200 g Mango
  • ½ Red Onion
  • 1 tbsp Finely Diced Coriander Stalks
  • 2 Limes
  • 2 Red Chillies
  • Pinch of Salt
  • 1 tbsp Olive Oil
Griddled Swordfish with Mango Salsa

I love this dish in the Summer. Beautifully meaty Swordfish with a zingy Mango Salsa. It takes minutes to make and if you have any left over salsa it works will with shellfish or chicken or ever bang it in a Hawaiian Burger!!

  1. Finely dice the mango and add it to a bowl with the coriander stalks, onion and the juice of 1 lime. Add in a pinch of salt and 1 tbsp of Olive Oil. Mix well and cover until needed.
  2. Turn on your griddle pan and heat until smoking. Season the swordfish with a little salt and drizzle over olive oil. Rub the oil in so the fish won't stick to the pan.
  3. Carefully law the fish away from you in the pan and cook for 2 minutes each side. Take out and allow to rest for a couple of minutes.
  4. Lay the fish on your serving plate and top with the salsa. Finally add a squeeze of lime.
