- Finely dice the mango and add it to a bowl with the coriander stalks, onion and the juice of 1 lime. Add in a pinch of salt and 1 tbsp of Olive Oil. Mix well and cover until needed.
- Turn on your griddle pan and heat until smoking. Season the swordfish with a little salt and drizzle over olive oil. Rub the oil in so the fish won't stick to the pan.
- Carefully law the fish away from you in the pan and cook for 2 minutes each side. Take out and allow to rest for a couple of minutes.
- Lay the fish on your serving plate and top with the salsa. Finally add a squeeze of lime.
