Ingredients
  • 2 Crumpets of choice
  • 1 Banana (mashed)
  • 1 Egg (beaten)
  • 50 ml Milk
  • 1 tsp Baking Powder
  • 1½ tsps Ground cinnamon
  • 1 tsp Mixed Spice
  • 2 tsps Sweetener
  • 1 Heaped tablespoon Sultanas
  • 2 tsps Icing Sugar

Hot Cross Baked Crumpets

Prep 10 minutes
Total 30 minutes
  1. Heat oven to 180 or 160 fan assisted.
  2. Cut your crumpets, I used Waitrose & Partners Sourdough Crumpets, horizontally then cut into bitesize cubes.
  3. In a bowl mix your mashed banana with the egg and milk I used Alpro unsweetened almond milk
  4. Add the baking powder 1 tsp of the cinnamon and the mixed spice and 1 tsp of the sweetener and the sultanas
  5. Mix all together and add to 2 ramekin style pots and leave to one side.
  6. Make up a combination of the remaining sweetener I used Canderel Sugarly and the half tsp of cinnamon and sprinkle this on top of each dish before putting in the oven for 20 minutes.
  7. Meanwhile add the Icing sugar to a bowl and add a few drops of water and mix up ready to drizzle on top.
  8. Once cooked allow to cool ever so slightly before adding icing sugar on the top and eat immediately. They can be refrigerated or even frozen but you'd need to leave off the icing sugar and just add this before eating.
