Ingredients
  • 2 tbsps olive oil
  • 1 medium onion, sliced
  • 2 garlic cloves, sliced
  • 1 lemongrass, sliced
  • 1 green chilli, sliced
  • 12 king prawns, leave tails on
  • 2 tbsps light soy sauce
  • 1 tsp fish sauce
  • 100 g spinach
  • 10 cherry tomatoes
  • ½ lime for the juice
  • Fresh coriander to garnish

Prawn & Spinach Stir-fry

  1. Heat the oil in a large saucepan or wok over high heat, then add the onion, garlic, lemongrass and chilli. Cook for 2 mins until soft and fragrant.
  2. Add the prawns, soy sauce and fish sauce and cook for another 2 mins until prawns turn pink but not fully cooked.
  3. Stir in spinach, cherry tomatoes and lime juice, cook for a further 2 mins.
  4. Turn off heat and transfer to a serving plate, garnish with coriander and serve with rice.
