- Marinate the chicken with the dry spices, salt and mustard oil and keep aside for 10 minutes
- In a wok take 1 tbsp of oil and once its hot, add curry leaves and cumin seeds and let it splutter.
- Then add minced garlic and green chillies and fry for a couple of minutes till the garlic is slightly softened.
- Then add the onions and fry till the onions are translucent. Add the green capsicum and fry for another few minutes
- Then add the marinated chicken and fry on high heat for 5 - 8 minutes and then reduce the heat to medium and cover and cook for 20 minutes.
- Once the chicken is cooked through, increase the heat and continue frying to get a bit of sear on the chicken pieces.
- Switch off the heat and finish off with a squeeze of lemon juice and some freshly chopped coriander leaves
