1.) In a large bowl, mash the ripe bananas till a pure forms. Combine with the eggs and vanilla extract and mix in the oats and cinnamon. Then fold in your blueberries.
2.) Add in a scoop of batter to a pan on medium low heat. Cook for about 3 minutes or until bubbles start to form.
Flip and cook the other side until golden brown.
3.) Topped with Greek yogurt, more blueberries, and granola.
