1 Juice of a lime

1 Red chilli sliced for garnish

2 tsps Dried coriander leaves for garnish

2 Large broccoli stalky bits removed

30 g Butter

1 tsp Salt and pepper


Quick and easy coconut curry with broccoli rice!
Prep the broccoli rice by blitzing the florets to rice size pieces and placing in a microwave bowl with the butter and seasoning. Set aside.
Heat a cast iron skillet or frying pan, oil, season the chicken with salt and pepper then chuck in the pan until golden brown.
Remove the chicken, oil again and throw in the onion until softened, then the pastes and then the dry spices, mixing between each stage. Stir for 30 seconds to a minute and then stir in the coconut milk.
Simmer for 10 then stir in the lime juice and fish sauce (add more or less of these two ingredients to suit your taste).
Simmer for another 5. Pop the broccoli in the microwave for 2 mins and then serve garnished with fresh chilli and coriander.
