Bringing A Bit Of Mexico To The Table For Breakfast

This is a fun way of spicing up breakfast, make breakfast fun and interesting and the kids will love it too, get them to assemble there quesadilla too

Prep 15 minutes
Total 45 minutes
  1. Preheat oven to 190℃ and grab a large oven tray, cover in tin foil and place the sausages on the tray and season with salt and pepper . Cook the sausages for 20mins turning after 10mins, after turning the sausages add the bacon to the tray and cook and turn after 5mins. Once both are cooked, turn the oven off and drain the bacon and sausages on kitchen roll then place on a plate and put back in oven to keep warm.
  2. In a mixing bowl add the eggs, salt and pepper and whisk for 15secs, place a non stick frying pan on a medium high heat and add the butter and eggs, cook the eggs quickly for 60secs until it's just about done then take off the heat.
  3. On a chopping board place two tortillas and take 1 tbsp of the salsa and cover half of the tortilla and begin to assemble. Once you've added your ingredients add cheese at the end and garnish with coriander then fold over, place a non stick frying pan over a medium heat and place the tortillas on and cook for 20secs each side. Repeat for others.
  4. Use the rest of the salsa in a small bowl as a dip and garnish more with onion and coriander and enjoy.
