

Spicy oven baked eggs
Baked eggs are so simple but absolutely delicious. There are so many combinations you can use when it comes to baked eggs - In this recipe, I added some finely chopped shallot, fresh chilli, crushed fresh garlic, smoked paprika and topped with some fresh coriander. This dish would also make a fantastic pre/post workout meal as it is packed full of protein, healthy fats, carbs, vitamins and minerals.
Pre heat the oven to fan 220℃
- Grease an oven proof dish with a drizzle of oil and sprinkle with the smoked paprika until evenly distributed.
- Crack the 3 eggs into the dish followed by the shallot, chilli, garlic and a pinch of salt and pepper.
- Place in the oven for 8-10 minutes until the white is set but the yolks are still runny but just keep an eye out as everyone likes their eggs different!
- Top with fresh coriander or herbs of choice.
I served my baked eggs with griddled balsamic glazed tomatoes and smashed avocado on brown sourdough toast along with a double espresso.

½ small shallot (finely chopped)

1 garlic clove (finely chopped)
