Method

  1. Warm milk in the microwave for 30 seconds.  Combine with yeast and stir with a spoon. Let sit for 1 minute.
  2. Add the sugar, eggs, flour and butter and mix until combined in your stand mixer.  Dough should be soft but not sticky to the touch.
  3. Transfer dough to an oiled bowl and cover with saran wrap and a towel and place in a warm spot in the house (near the window).  Let the dough rise for 1.5 hours.  Dough should be doubled in size.
  4. Roll the dough on a floured cutting board or surface.  Roll it into a rectangle that’s about 30 cm by 40 cm.
  5. Spread ⅓ cup softened butter over the surface of the dough using your hands.
  6. Combine ½  cup brown sugar with 2 teaspoons of cinnamon. Sprinkle over the buttered dough and massage it in with your hands.
  7. Take the shorter side of the dough and begin rolling until it forms a log.  Try to roll it as tightly as you can.
  8. Cut the roll into 9 slices, about 1.5 inches long.  Use a serrated knife to make it easier.
  9. Line a square pan with parchment paper.  You can spray cooking spray if you want. Place the rolls in a 3 by 3 arrangement.  They will be spread out and not touching.
  10. Cover the pan with saran wrap and a towel again.  Let it sit for at least 30 minutes in a warm spot to rise.
  11. Preheat oven to 350℉.  When the rolls have grown, there should be no space or little space between them.  Bake for 30 minutes.
  12. Prepare icing by combining 3 tablespoons of softened butter, 1 cup icing sugar and half a package of softened cream cheese. (Let sit at room temp for an hour). Beat on high until whipped.
  13. When the buns are baked, let them cool for 10 minutes.  Spread the icing over the buns.
