Ingredients
  • 2 fillets of salmon
  • 1 tbsp sweet chilli sauce
  • 1 tbsp soy sauce
  • 1 Heaped tablespoon runny honey
  • 1 dsp mirin or dry sherry
  • 1 tsp ginger paste
  • a little lemon juice
  • 2 small balls of burrata
  • half a pack of watercress
  • 2 Heaped tablespoon Datterini tomatoes (from Odysea)
  • a pinch of chilli flakes
  • a spinkling of sesame seeds

This is a beautifully simple salmon dish... glazed with a lovely marinade of sweet, chilli, soy, ginger, mirin and honey. Then just pan fried in the juices and served with a creamy ball of burrata and these sweet little semi dried vine tomatoes! Delightful...

  1. Start by making the glaze with the honey, soy, sweet chilli and ginger in a bowl together. Add in the lemon juice, mirin and a drizzle of extra virgin olive oil. Whisk into a nice smooth marinade
  2. Place the salmon fillets in a bowl and cover liberally with the marinade and set aside. Then prepare two serving plates with the watercress, the tomatoes and balls of burrata. Sprinkle the burrata with the chilli flakes and some coarsely ground black pepper
  3. Finally, heat up a little oil in a pan and when it's hot, pan fry the salmon, along with some of the sauce for a few minutes each side. Keep it moving to avoid the sauce burning and baste as you go along. When the skin in nice and crispy and the flesh just cooked through, transfer to the individual plates and sprinkle with some sesame seeds. Drizzle the burrata with a little chilli oil and serve the remainder of the sauce on the side
