  • Half a large butternut squash (cubed)
  • 1 Red pepper (chunks)
  • 1 Yellow pepper (chunks)
  • 8 Cherry tomatoes (whole)
  • 2 Garlic cloves (whole)
  • 2 Red onions (chunks)
  • Half tin of chickpeas
  • 1 tbsp Cumin
  • 1 Smoked paprika
  • 5 tbsps Olive oil
  • 1 tsp Salt
  • 2 Handfuls lettuce

Roasted Veg Salad

Simple, satisfying and flavoursome salad 🥗


  1. Preheat oven to 200 degrees
  2. Cut up butternut squash into chunks
  3. Put into a large bowl and coat in 1 tbsp oil and pinch of salt
  4. Place into the oven
  5. Meanwhile, cut all remaining veg up and place into the same bowl and coat with remaining oil and salt.
  6. Add chickpeas to the bowl along with paprika and cumin
  7. Place onto a baking tray and bake for 20 minutes
  8. Once butternut squash and veg is golden brown, take out and serve on top of lettuce.
  9. Add baked tofu (optional)
