Ingredients
For the pancake batter
  • 2 eggs
  • 100 g egg whites
  • 60 g all purpose flour
  • 20 g coconut flour
  • 20 g protein powder (or more flour)
  • 2 tsps psyllium husk
  • 1 tsp bicarbonate of soda
  • bit of milk/water to dilute the batter (if needed)
  • sweetener of your choice
For the decoration
  • Blueberries
  • Strawberries
  • Edible Black Marker
  • Melted chocolate

I really do hope you can tell these are supposed to be bunnies :D It was harder than I originally thought but at least they look cute, don’t they?

Perfect breakfast for your partner for the V day or just for yourself (in my case). I’m sure kids would absolutely love these too!


Mix all the ingredients for the pancake batter with a hand mixer. Add more water or milk if the batter is too thick.

Fry on a pan with a bit of coconut oil. Create one bigger circle for the head, one smaller for the body, two paws, two legs and two ears.

Assemble on the plate, use blueberries as eyes and draw the nose, mouth and whiskers with the edible black marker.

Use strawberries to decorate the cheeks and chocolate-dipped strawberry hearts for bunnies to hold.
