  • 500 g Chicken Mince
  • 800 g Chopped Tomatoes/Passata
  • 300 g Pasta (any shape)
  • 1 Pack of Asparagus (Cut into 2cm)
  • 1 Red Onion (Finely Chopped)
  • 1 Handful of Cherry Tomatoes (Halved)
  • 1 Red Pepper (Chopped into small slices)
  • 200 ml Milk
  • 250 ml Veg Stock
  • 2 Heaped teaspoon Cumin
  • 3 Heaped teaspoon Mixed Herbs
  • 3 Heaped teaspoon Garlic
  • Salt and Pepper
  • 4 Pieces of Basil
  • 1 tsp Sugar
  • 150 g Cheese
  • 2 Baby Leaks
  • 2 Heaped teaspoon Tomato Puree
  • 2 Heaped teaspoon Worcester sauce

Chicken Mince Pasta

An alternative to Beef Mince, can be used with vege/vegan mince too! Throw in all your old veggies from the fridge!


  1. Chop up all the vegetables and then heat up a pan with a little oil. Add the red onion and cook for 3 minutes until soft, add the garlic, peppers, tomato puree and then season.
  2. Add the chicken mince and cook until the mince is sealed, then add the vegetable stock, chopped tomatoes/passata, milk and pasta.
  3. After a few minutes add the rest of the vegetables, spices/herbs and sugar, cover the pan and let it simmer for 12-15 minutes or until the pasta is al dente.
  4. Once the pasta is done TASTE!! as you may need more sugar or seasoning. Then switch the grill on, add the cheese and add to the grill until the cheese is bubbly.
  5. Serve with Garlic Bread and Basil.
