Ingredients
  • 200 g Long grain rice
  • 2 tbsps Olive oil
  • 2 Garlic cloves (finely chopped)
  • 1 tbsp Chopped ginger
  • 150 g Jumbo king prawns
  • 3 tbsps Soy sauce (low sodium)
  • 1 tbsp Chinese cooking wine
  • 1 Red chilli (finely chopped)
  • 1 Bunch of spring onions (whole)
  • 1 tbsp Sesame oil
  • 1 Juice of a lime
  • Sesame seeds

Lovely healthy dinner with Asian flavours

1.Pre heat oven at 200, and bring a pan of salted water to the boil, toss spring onions in sesame oil and place on a try in the over for 15 min and put rice into boiling water and put a lid on it and turn down to a simmer and also cook for 15 min.

2.Heat oil in a pan over medium heat. Add ginger and garlic and cook for 30 seconds until fragrant. Add prawns and stir to coat with oil. Continue to cook for 1-2 minutes, stirring constantly to ensure even cooking.

3.Stir in cooking wine and soy sauce and continue to stir for 15 seconds. Then add the chilli and pepper and give it another stir and continue to cook for 2-3 min.

4.Now serve prawns on top of the roasted spring onions and with the rice of the side, sprinkle over some sesame seeds and fresh lime juice.
