  • 1 Large Cauliflower (Cut Into Chunks Or Florets)
  • 1 Large Head Of Broccoli (Cut Into Florets)

  • 1 Garlic Clove
  • 50 g Butter
  • 50 g Plain Flour
  • 600 ml Milk
  • 80 g Cheddar Cheese (Grated)
  • Salt & Pepper

Cauliflower Broccoli Cheese

Who doesn't love a good cauliflower cheese yeah? How about we take it a little bit further and blitz up some broccoli into the cheese sauce so it's packed full of all the goodness we want and tastes absolutely out of this world

  1. Preheat the oven to 180℃ .
  2. Bring a saucepan of water to the boil, add a pinch of salt and add the broccoli and cook for 6mins, reserve a mugful of the broccoli water then drain and leave to cool.
  3. In a large saucepan over medium heat, add the butter and melt. Stir in the flour and cook for a minute, now slowly pour in the milk and begin to whisk to make sure there is no lumps in the sauce, mix until all milk is incorporated and the sauce is smooth. Add most of the cheese and stir through making sure it's not too thick but also not too loose, but you'd want it more on the looser side. Season to taste.
  4. Pour the cheese sauce into a blender, add the broccoli and 2 tbsps of the broccoli water and begin to blitz until you have a creamy light green sauce.
  5. Grab an oven dish, arrange the cauliflower in the dish and pour over the sauce. Scatter the remaining cheese on top and place in the oven for 45mins until it golden and gnarly.
  6. Once cooked, remove from the oven and serve. Enjoy
