  • 300 g Fresh udon noodles 200g mushroom
  • 1 garlic clove
  • 55 g butter
  • 1 fresh green chilli
  • ¼ red pepper
  • Half handful coriander chopped
  • Japanese 6-7 spice

Spicy Vegan Asian Mushroom Noodles

Super easy and beautiful tasting recipe!

PREPPING:

  1. First you want to start by chopping your garlic into superfine pieces, slicing your mushrooms into half.
  2. Chop your red pepper into small cubes.

COOKING:

  1. Add your butter to the pan and then drop in your garlic add a pinch of salt and pepper. And then do you want to drop in your mushrooms into the pot. Leave your mushrooms to pan fry until they release the juices and once you’re satisfied that they are fairly cooked drop in the Udon noodles, stir lightly Adding in your peppers and chilli. Once that is done, drop in 1 tsp of butter, drizzle 1 tsp of soy sauce. Take up off the stove. Add in your coriander mix well And your dish is now ready to plate.

PLATING:

  1. Please for noodles in the centre of your plate -making sure the mushroom pieces evenly spread out over the top. Dress or a tiny bit of soya sauce and olive oil. Garnish with coriander and your dish is now ready to serve.
