  • 1 Red onion
  • 3 Cloves garlic
  • 1 Grated carrot
  • 1 Fresh chilli
  • Handful cherry tomatoes (halved)
  • 50 ml Soya milk
  • 1 Tin lentils
  • 1 Tin chopped tomatoes
  • 1 litre Veg stock cube
  • 2 tbsps Soy sauce
  • 200 g Wholemeal pasta
  • Bunch of fresh basil

  1. Fry onions, chilli & garlic for 3-5 minutes in a large pot
  2. Add remaining ingredients (keep some basil aside for garnish)
  3. Bring to a boil, then reduce and simmer until pasta is cooked
  4. Garnish with remaining basil and serve
